Freeze the Cheese Sticks

Place the unwrapped mozzarella sticks on a parchment-lined baking sheet in a single layer. Freeze for at least 30 minutes, or up to 2 hours. Solidly frozen cheese is essential — it won’t melt immediately when it hits the hot bacon.

Partially Cook the Bacon (Optional but Recommended)

Lay bacon slices in a cold skillet. Cook over medium heat for 2–3 minutes per side, just until the fat begins to render and the bacon is pliable but not crispy.

Drain on paper towels. This step ensures the bacon finishes cooking before the cheese fully melts. (Skip this step only if using an air fryer with very precise temperature control.)

Wrap Each Stick

Take one partially cooked bacon slice and spiral-wrap it tightly around a frozen mozzarella stick, slightly overlapping the bacon as you go. Leave no cheese exposed if possible. Tuck the end underneath. Repeat for all sticks.

Bake or Air Fry

Oven method: Preheat to 400°F (200°C). Place wrapped sticks seam-side down on a wire rack over a baking sheet (to allow fat to drip). Bake for 8–12 minutes, until bacon is deep brown and crispy.
Air fryer method: Preheat to 380°F (193°C). Place sticks in a single layer, seam-side down. Air fry for 6–8 minutes, checking at the 5-minute mark.

Rest for 1 Minute (Very Important)

Let the sticks rest on the rack for 60 seconds after cooking. This allows the molten cheese inside to set slightly so it doesn’t gush out when you take a bite.

Serve Immediately

Transfer to a plate. Sprinkle with seasonings if desired. Serve hot with ranch, marinara, or just alone. Warn your guests that the inside is lava-hot.
