Separate the garlic cloves. Thinly slice half of the garlic for crispy garlic chips. Mince the remaining half for the sauce. Set aside separately.

Prepare the Beef

Pat the beef cubes completely dry with paper towels. Season generously with salt and pepper. Let sit at room temperature for 15 to 20 minutes—this ensures even cooking and better searing.

Make Crispy Garlic Chips

In a small skillet, heat 1 tablespoon of oil over medium-low heat. Add the sliced garlic and cook, stirring frequently, until golden brown and crisp, about 3 to 4 minutes. Watch carefully—garlic burns quickly. Remove with a slotted spoon and drain on paper towels. Set aside for garnish.

Sear the Beef

Heat a large cast iron or heavy-bottomed skillet over high heat until very hot. Add 1 tablespoon of oil. Working in batches to avoid overcrowding, add the beef cubes in a single layer.

Sear undisturbed for 1½ to 2 minutes per side, until deeply browned and caramelized. The beef should be medium-rare to medium (internal temperature 130°F to 140°F / 54°C to 60°C). Remove and set aside. Repeat with remaining beef, adding more oil as needed.

Make the Sauce

Reduce heat to medium. Add 1 tablespoon of butter to the skillet. Add the minced garlic and sauté for 30 seconds until fragrant—do not let it burn.

Add the Worcestershire sauce, soy sauce, oyster sauce (if using), brown sugar (if using), and black pepper. Stir to combine, scraping up the browned bits from the bottom of the pan. Simmer for 1 to 2 minutes until slightly reduced.

Return the seared beef and any accumulated juices to the skillet. Add the remaining 1 tablespoon of butter. Toss everything together until the butter melts and the sauce coats the beef, about 1 minute. Taste and adjust seasoning with salt if needed.
