The sauce gets its velvety texture from butter and cream, while a blend of aromatic spices—garam masala, cumin, coriander, and kasuri methi (dried fenugreek leaves)—adds depth and warmth. Instructions
Marinate the Chicken
In a bowl, combine yogurt, lemon juice, ginger-garlic paste, salt, turmeric, chili powder, and garam masala. Add the chicken and coat well. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Cook the Chicken
Preheat your oven broiler or heat a skillet over medium-high heat. If broiling, place the chicken on a foil-lined baking sheet and broil for 6 to 8 minutes per side until lightly charred. If pan-searing, cook in 1 tablespoon of oil for 4 to 5 minutes per side. Set aside. Cut into bite-sized pieces when cool enough to handle.
Make the Sauce
In a large skillet or Dutch oven, melt 2 tablespoons of butter with the oil over medium heat. Add the onion and cook for 5 to 7 minutes until golden brown. Add the ginger-garlic paste and cook for 1 minute.
Add the tomato puree, chili powder, coriander, cumin, garam masala, and sugar. Cook for 5 to 7 minutes, stirring, until the tomatoes darken and the oil separates.
Simmer the Sauce
Add the water and salt. Simmer for 10 minutes. Use an immersion blender or carefully transfer to a blender to puree the sauce until smooth.
Finish the Sauce
Return the sauce to the skillet. Stir in the heavy cream and kasuri methi. Add the cooked chicken pieces. Simmer for 5 to 10 minutes to allow the flavors to meld. Stir in the remaining 1 tablespoon of butter.
Serve
Garnish with fresh cilantro. Serve hot with naan or basmati rice.
