Prepare the Potatoes
Scrub the potatoes clean. Using a waffle cutter or crinkle cutter with a waffle blade, cut the potatoes into ¼-inch thick waffle slices.
A mandoline with a waffle blade also works. If you don’t have a waffle cutter, a standard crinkle cutter creates classic crinkle-cut fries—delicious but without the signature grid pattern.
Soak the Fries
Place the cut waffle fries in a large bowl of ice water. Soak for at least 30 minutes, or up to 2 hours, to remove excess starch. Drain and rinse until the water runs clear. Spread the fries on a clean kitchen towel or paper towels and pat thoroughly dry. Any remaining moisture will prevent crispiness.
For Frying (Double-Fry Method)
In a heavy-bottomed pot or Dutch oven, heat 2 to 3 inches of oil to 325°F (165°C). Working in batches, carefully add the fries and fry for 3 to 4 minutes until they are pale golden and tender but not yet crispy.

For Baking
Preheat the oven to 425°F (220°C). In a large bowl, toss the dried fries with olive oil, salt, pepper, and any optional seasonings. Arrange in a single layer on a parchment-lined baking sheet. Bake for 20 minutes, then flip each fry and bake for another 15 to 20 minutes until golden brown and crispy. For extra crispiness, broil for the last 2 to 3 minutes.
