Gooey Fudgy Chocolate Brownie Cookies

Ingredients
- 200 g dark chocolate, chopped
- 125 g butter, chopped
- 150 g caster sugar
- 100 g light brown sugar
- 2 medium–large eggs
- 3 tablespoons cocoa powder
- 130 g all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- Sea salt for sprinkling (optional)
Instructions
- Preheat Oven: Preheat your oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
- Melt Chocolate: In a heatproof bowl, combine the chopped dark chocolate and butter. Place over a pan of simmering water, making sure the bowl does not touch the water. Stir occasionally until fully melted and smooth.
- Whip Eggs: In a separate medium bowl, use an electric whisk on high speed to beat the caster sugar, light brown sugar, and eggs until the mixture is very light, thick, and fluffy.
- Combine Ingredients: Slowly pour the melted chocolate–butter mixture into the whipped egg mixture. Whisk gently until fully combined.
- Add Dry Ingredients: Sift in the cocoa powder, flour, baking powder, and salt. Fold gently until just combined—do not overmix.
- Shape and Bake Cookies: Using an ice cream scoop, portion the cookie dough onto the prepared baking tray, leaving plenty of space for spreading. Sprinkle lightly with sea salt if desired. Bake for about 12 minutes, until the edges are firm and the centers remain soft.
- Cool Cookies: Let the cookies cool on the tray for about 10 minutes before transferring them to a cooling rack to cool completely.
- Storage: Once fully cooled, store the cookies in an airtight container at room temperature for up to 1 week.
