Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

If using mustard, spread a thin layer on half of each square. Place ham and cheese on the same half. Fold the empty half over the filling to form a triangle or rectangle. Press edges with a fork to seal.

Brush tops with beaten egg wash. Cut 2 small slits on top of each pocket for steam to escape.
