Pat the halibut fillets completely dry with paper towels. Season generously on both sides with salt and pepper.

Sear the Halibut

Heat a large nonstick or stainless steel skillet over medium-high heat. Add the olive oil. Once the oil is shimmering, carefully place the halibut fillets in the skillet (presentation side down).

Cook undisturbed for 4 to 5 minutes, until the bottom is golden brown and crispy. Flip and cook for another 3 to 4 minutes, until the fish is opaque and flakes easily with a fork. The internal temperature should reach 130°F to 135°F (54°C to 57°C) for medium. Remove the fish from the skillet and set aside on a plate.

Make the Lemon Butter Sauce

Reduce heat to medium-low. Add 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant. Add the lemon juice, lemon zest, and capers (if using).

Stir to combine. Remove the skillet from the heat. Add the remaining 2 tablespoons of cold butter, swirling the pan until the butter melts and the sauce becomes glossy and emulsified. Stir in the fresh parsley. Season with salt and pepper.

Serve

Place the seared halibut on plates or a serving platter. Spoon the lemon butter sauce over the fish. Garnish with additional parsley and lemon wedges. Serve immediately with steamed asparagus or your favorite side dish.
