Preheat and Prepare

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or oil.

Shape the Tortilla Cups

Brush both sides of each tortilla lightly with oil. Gently press each tortilla into a muffin cup, pleating the edges as needed to fit. The tortillas should form cup shapes that come up to the rim. Bake for 8 to 10 minutes until the tortillas are lightly golden and starting to crisp. Remove from the oven and set aside.

Cook the Ground Beef

While the tortillas bake, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, for 5 to 7 minutes until browned and cooked through.

Drain excess fat if necessary. Add the diced onion and cook for 2 to 3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.

Season the Beef

Add the chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne (if using). Stir to coat the beef and toast the spices for 1 minute. Pour in the water or beef broth and simmer for 3 to 5 minutes until the liquid has mostly evaporated and the mixture is thick and flavorful.

Assemble the Taco Cups

Spoon the seasoned ground beef evenly into the pre-baked tortilla cups, filling each about ¾ full. Top each cup with shredded cheese.

Bake Again

Return the muffin tin to the oven and bake for 5 to 7 minutes until the cheese is melted and bubbly and the tortilla edges are golden and crisp.

Add Toppings and Serve

Remove the taco cups from the oven and let cool for 2 to 3 minutes. Using a spoon or small spatula, gently lift the cups out of the muffin tin. Arrange on a serving platter. Top with shredded lettuce, diced tomatoes, sour cream, pickled jalapeños, cilantro, and avocado if desired. Serve immediately with lime wedges.
